Server build with Xeon L5630 / L5640

Hello, folks.

I am upgrading my existing server to something quieter and more efficient. The tasks that server performs are:
  • Medium-load VMware Server
  • NAS
In addition, server does on-the-fly encryption of all partitions. That part lead me to choose Intel Xeon L5630, that has AES-NI, and can handle VMware works. The question is - what do I do about motherboard? So far my picks for older builds weren't so great, so I need your advice.

Particularly, I'm interested in Supermicro's models X8-SAX / X8-STE / X8-STI and variations of those - anybody has built anything with those? Or can you recommend some other alternatives that you used and that worked out great for you? I am dead-set on L5630 (40W!), so motherboard needs to be LGA1366 and easy to cool.

Please share your real-life build experiences that involved L5630/L5640 - what motherboard/RAM/cases did you end up choosing and how quiet / efficient results did you get?
