sorry I haven't built a computer in years.
I was thinking that it would be nice to somehow detect by software/bios when the PSU fan fail.
Are all the modern/good units able to connect the mainboard fan header?
To be honest I was checking the Silverstone SFX models for a home NAS project.

No: AFAIK almost none can do that.

There have been a few PSUs over the years that have a fan monitor cable coming out of them that you can connect to motherboard header, but not common place.
You can achieve it with some modding, which will most likely void any warranty.
Some PSU fans will have a Speed monitoring connection that you can extend out of the PSU and connect to the motherboard.
Others won't have this and you will need a fan swap for a fan with rpm monitoring, and then extend the connection for the monitoring wire out to connect to the motherboard.
My PSU is fan swapped and monitor wire extended so I can read the fan speed from it.
