At the moment, if I am running 3x windows server VMs and 2x windows 7 VMs in ESXI. Altogether about 28 Gigs of ram is used and the CPUs combined load varies from 70-80%. Again, this is if I am really pushing it.

I will be running the
ESXI 6.5 hypervisor as my operating system.
Then within ESXI I will be running the VMs I previously mentioned. (Windows server 2012/2016, Windows 7, etc.)
So the stack looks a bit like this: The server hardware -> ESXI hypervisor -> Various server OSes / Windows OSes / Linux OSes etc.
