You'll probably be okay. Thanks to power gating, the i5 consumes about the same as the i3 at idle, and unless I misunderstand your intent here, I expect that those cores will never be fully-loaded. So long as you're not planning on a RAID-5 array with tons of drives, you should be fine.

That ISK300-65 looks like just what I'm looking for. PSU is external, efficient and more than enough for this build.
