If these are just talking head webcasts, then 8GB should be fine. If you were producing music with orchestral levels of tracks/VSTs, then you would need more. Unless you need portability (which with 0% battery retention ... nope) these things are helplessly outmoded. I daresay a 35 bucks raspberry pi II would be a lot more versatile.

Whether it is safe will have to do with the cross-section of the wires used. I'm pretty sure they will be over-dimensioned and you'll be fine. If you follow Abula's reasoning, many GTX970's need only a single 8-pin plug. That would imply the amperage poses no problems for the cable. In your scenario...

I'm already hell annoyed that my macbook air doesn't have 2 thunderbolt ports so I can run two monitors (of course the 2014 model didn't get displayport 1.2). The reason why I would choose mITX over mATX: there are hardly any (or none, I couldn't find any) mATX boards with built-in WiFi/Bluetooth, miniSATA or .m2 slots. So if you'd want to add features you'll just end up using the empty PCI slots, likely interfering with GPU cooling. I a bad case scenario...
