The problem with using the brass standoffs that a) they dont fit, the have a different type of screw, and b) even if they did, you would not get enough pressure downwards, as they are designed to go all the was down and contact the motherboard, but in this case the metal from the brack that sticks ...

You also want to be careful that they can handle the power. Some only accept few hundred milliwatts, some take 3W - more than enough for most medium-low speed fans. Raid 0 will not give you much of a noticable speed up unless you run server-like applications (that require lots of files at random points on the disk).
