ill probably go with the plateless method that Benius linked to, however if I choose to go with the plate (assuming they ship to canada) that Lodestar suggested, will the 775 mount that comes with the ninja fit this plate?

The whole plan seems poorly thought out. If I wanted to use a separate OS drive, I'd probably put the data drives in RAID1 in some kind of NAS. Problem goes away. If you are going to do any serious work then I would skip the hackintosh or just have it around for fun. There are lots of good DAW and video editing programs for Windows. I would skip RAID 0 and instead place source video files on one disk and output files on the other, perhaps using the SSD for project and proxy files. Or, since you already have the HDDs, you could test both setups before deciding... Any particular reason not to use the integrated GPU? that is not ...

You con use RAID 0/1/5 from any SATA port provided by the Z77 chipset, on the ASUS P8Z77-V LK that's all six. You can create multiple array from drives on these ports. Using the SSD to store render content makes sense, it's much faster than any hard drive, even in RAID0. RAID1 for storage isn't bad...
