You don't really need the top fan imo - I prefer simple, front to back airflow :) Around 800RPM should be enough for the exhaust fan, but I'd go up to around max speed on the intake, as it'll be providing air for the GFX and CPU. It's far enough into the case that you probably won't hear it too much...

A quad core is better than a dual core for multitasking. Unless the program is optimized to use 4 cores, a faster dual core is better for that single program.
