In terms of fans, i was planning on:
Replacing the two Case Fans with.

I was going to pass on the top fan (maybe even close it off?)
What are your thoughts in terms of airflow / noise between the 500 and 800RPM fans?
Would it be best to go with the 800RPM and then control the speed with the kaze master?

IMO its always better to have full control of your fans, what ever is audible for one person might not be for other, what im trying to say is with the fan controller you always can tweak it to your personal liking or cooling needs. The only downside is if the fans don't like undervolting. If you are going with a fan controller i would go with higher rpm fans and just use the fan controller to lower them to what you like/need.
Personally i would go with more traditional fans for case fans 120mm, even though the Scythe 140mm have 120mm mounting you still have the overhead of the structure, not sure if you can mount them, you probably should check this before, for this reason i would go with 120mm fans, Slipstreams, Sflex, etc. I own a Scythe Kaze Master fan controller (6fan) and been perfect for me, i can lower my Gentle Typhoons 1850rpm to 450rpm, one thing that you should check is the P183 has a door for the front, im not sure it will close with a fan controller like scythe, as the nobs are a little big.
Another option you have is to buy 4pin pwm fans, the new boards are coming with them, i was reading on an asus (not sure if its yours) that had 3x 4pin pwm fan plugs in the mobo, and it has a way to control them via bios (crosscheck your mobo you planning to buy). If it has 3, you could use one for the front one for the back and one for the cpu, if you wish to use all the fans slots you will need something like PWM-Y Cable Adapter. Some examples, Scythe Kama Flex 120mm x 25mm PWM Fan w/ S-Fluid Dynamic Bearings (SA1225FDB12H-P) and Scythe Slip Stream 120mm x 25mm PWM Mid Speed Fan - (SY1225SL12LM-P).

Oh? Where will you be installing those 140mm fans?
They won't fit anywhere up front of the P18x, nor in the rear exhaust position. The only places they will fit are in the top exhaust position, or as a CPU or GPU fan.
But to answer your question, I'd go for the higher RPM version and control it with a fan controller. Better to have that extra oomph available if/when you need it.
